  • 1 15 oz can low sodium black beans, drained and rinsed
  • ½ c peanut butter (without added sugar or palm oil, try Smucker’s Natural Chunky)
  • ½ c maple syrup
  • 1 tbsp avocado or peanut oil
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • ¼ c almond or oat flour (take organic old-fashioned oats-grind to a fine powder in a coffee bean grinder)
  • ¼ c cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp cayenne pepper (optional) 
  • Chocolate chips and chopped nuts to sprinkle on top of batter

Preparing

In the base of a food processor

place the beans, peanut butter, maple syrup, oil, vinegar, vanilla, and
blend well. Scrape sides of processor as needed; 1-2 times usually works.

Add dry ingredients to the processor. Blend until creamy and smooth, stopping occasionally to scraping down the sides. Batter will be thick.

Place a piece of parchment paper in an 8 x 8 pan. Spoon batter into pan, spread evenly. Sprinkle

chocolate chips and nuts on top.

Bake 30 minutes or until a toothpick inserted comes out clean. They will have a fudgy consistency.
