  • ½ onion (sliced)
  • 1 ½ cup of shredded oyster mushrooms
  • 1 ½-2 cups low sodium vegetable broth (divided)
  • 4 cloves of garlic finely diced
  • 1 tsp of thyme
  • 1 can of jackfruit (strained and rinsed)
  • 1 cup of bbq sauce
  • 1 ½ tablespoon of maple syrup
  • 1/4 tsp of liquid smoke

Preparing

Large skillet medium heat

Preheat a large skillet to medium heat. Add onion and mushroom. Saute until softened for 6-7 minutes

Add garlic, stir for a few seconds until fragrant. Deglaze with ¼ cup of vegetable broth. Add thyme and saute until liquid is absorbed.
Then, add  jackfruit and 1 cup of vegetable broth, turn down heat, cover and simmer for 10 minutes

Remove the lid, stir in barbecue sauce, maple syrup, and liquid smoke. Increase heat to medium for 7-8 minutes then medium high for the last 3 minutes.
