Banana Blueberry Bread (or muffins)

This bread is so moist.

Thanks to the three, large, and very ripe bananas I used. By the way, the more ripe the bananas, the better they are for baking. If you have extra ripe bananas that you haven’t been able to use, you can peel them and and freeze them for whenever you need to use them.

    Ingredients

    Dry Ingredients

    • 1 c whole wheat white pastry flour, King Arthur best
    • ¾ c oat flour(old fashioned organic oats ground in a spice grinder till powdery)
    • 2 tsp baking powder
    • ½ tsp baking soda
    • ½ tsp cinnamon
    • ½ tsp nutmeg__

    Wet Ingredients

    • 1 c pureed overripe bananas (2.5 medium bananas)
    • ½ c plain nondairy milk
    • 1/3 c pure maple syrup
    • 1 tsp vanilla extract
    • Filling: ½ c chocolate chips, or 1 c. blueberries or other fruit

    Preheat oven to 350 degrees. (I used a convection setting).

    In a large bowl, mix the dry ingredients with a fork.

    Place bananas in a food processor and puree. Then add milk, maple syrup, vanilla and puree.

    Add banana puree to the dry ingredients in the mixing bowl and mix. Fold in blueberries, fruit or chocolate chips.

    Bake for 45 minutes, until golden brown and toothpick in center comes out clean.
